Causa with Crab

A refreshing cold entree perfect for a warm summer day


INGREDIENTS

Crab stuffing:
1 lb lump crab meat
2 tbsp mayonnaise
salt
pepper

Layers
3 lbs potatoes, peeled, cubed
1 stick butter
1/2 cup milk
2 large avocado, sliced thinly
1 tsp tumeric
salt
pepper


DIRECTIONS

1. Mix mayonnaise and crab stuffing in bowl. Salt and pepper to taste. Put aside

2. Boil potatoes until fork-tender. Drain. Place in large bowl.

3. Mash potatoes. Mix in butter, mil, and tumeric. Salt and pepper to taste.

4. Line a casserole dish with plastic wrap. Add half of the mashed potatoes and flatten out in one layer (about 1/2-3/4 inch think.

5. Distribute half of the avocado slices in one layer.

6. Add all the crab mix and distribute in a single layer. Be careful in distributing the crab mix so you don't mess up the avocadoes.

7. Repeat step 5.

8. Add remaining mashed potatoes.

9. Cover top layer with more plastic wrap. Place in refrigerator for at least 1 hour. Over night is okay.

10. Before serving, remove the top plastic wrap. Flip casserole dish on top of a serving platter. Remove casserole dish and plastic wrap. Top with favorite salsa. Serve chilled.
