Trevor's Beanless Chili

No beans means people can safely hang around the party longer. Note: this chili has a more concentrated flavor and packs more of a punch than other chili. Thus, it's great as a topping.


INGREDIENTS

- Buffalo/bison meat
- Chili grind beef

- Onion, diced
- Green and red bell pepper, diced
- A few cloves of garlic, smashed

- Two bottles of Guiness

- A few serrano peppers, reconstituted and diced
- Several tablespoons of your favorite chili powder(s)
- A can or two of good-quality crushed/diced tomatoes (preferably diced, for texture)

- Some water
- A few tablespoons cornmeal


DIRECTIONS

Brown the chili grind beef, which will add some fat to the sautee pan, and add to a crock pot. Then brown the lean bison meat, adding that to the crock pot when thoroughly browned.

Sweat the vegetables in the same sautee pan, and when cooked, deglaze the pan with some of the Guiness. Add vegetables and rest of the bottle of guiness to the crock pot. Drink the remaining bottle, or share it with your sous chef.

Add the serrano peppers, chili powder, and tomatoes to the crock pot, to taste. Add some water, as the slow-cooking will reduce the chili and you dont' want it too strong.

Cook for several (2-6) hours until ingredients are melded together. To thicken, add cornmeal until desired texture is reached. If you need to adjust by adding salt or any other ingredients, now's the time.

Serve and enjoy.

This is by far the best chili I have ever had. I like how there are no beans (or other useless fillers). I highly recommend you try this chili recipe. I think it's even better the next day.
