Simple Marinara Sauce

Simple and verstaile marinara sauce that can be good foor lasagna, pasta, or for any meat.


INGREDIENTS

1 quart diced tomatoes
1 quart tomato sauce
1/2 cup chopped fresh basil
1/2 cup chopped white onion
2-3 cloves fresh garlic, chopped
2 tsp dried oregano
1 tbsp sugar salt
pepper
olive oil


DIRECTIONS

1. Use a medium to large size stockpot. Saute onions in oil until translucent. Add garlic in the last couple minutes of cooking.

2. Add sauce and diced tomatoes. Bring to boil.

3. Add basil, oregano, and sugar. Salt and pepper to taste.

4. Simmer for 15 minutes.

* Optional: For a meat-based sauce, add ground beef, turkey, or sausage to onions. You can also add a cup of wine for extra flavor to deglaze the pan before adding tomatoes.

Please tell me you had a momentary lapse in judgement when you left out garlic!!! I make a similar sauce but when sauteeing the onions also use garlic. And I use those large cans of San Marzano or Muir Glen tomatoes. The Muir Glen need less sugar. And I think it tastes better when it simmers for more like an hour then throw the fresh basil in near the end. Mmmmm....
