A fiery Sichuan classic.


INGREDIENTS

1/4 c chicken broth
2T hot bean paste
2T soy sauce
Kosher salt
1 1/2 to 2T corn, peanut, or canola oil
1/2 lb ground pork shoulder
1T + 1t minced garlic
1T + 1t finely minced peeled ginger
1T cornstarch dissolved in 2T water
1 1/2t Japanese sesame oil
1/2 to 1 t toasted sansho powder
3T thinly sliced scallions


DIRECTIONS

To make the sauce:
-Stir together broth, bean paste, soy sauce, and kosher salt.
